A semi-soft cheese originating from the town of Edam in northern Holland. It is traditionally sold in small ball shapes and has a pale-yellow colour. Its flavour is normally slightly sweet, with a nutty undertone. Today it is mainly produced elsewhere, but if it is authentic it is labelled Noord-Hollandse Edammer. The cheese can often be found infused with various herbs.
