In the main, I wanted to recognise it as a high source of vitamin C, as a big yellow bell pepper has 341mg of it - that's roughly the same as five whole oranges! One red bell pepper equates to three oranges and the green bell pepper, which is a little less sweet, still contains twice the vitamin C found in an orange.
