A large fish that belongs to the same family as rays. Rather than bones it has cartilage and for this reason it is an excellent source of collagen. It's taste is similar to that of scallops with a mild flavour. Most supermarkets in the UK don't stock it, but you will find plenty of online specialist fishmongers.
