Dinner

I have two variations of this dish, one with Chorizo and Chicken and the other with seafood. Either way, your friends will be hard pushed to realise you are not using real rice! This a low carb superstar and a great dish for entertaining even the best foodies.

Ingredients

  • Prawns (300g)
  • Tuna (4 Steaks)
  • Mussels (12 to 20)
  • Tomatos (1 can chopped)
  • Garlic (5 cloves)
  • Smoked Paprika (2 tbsp)
  • Red Bell Pepper
  • Celery (4 sticks)
  • Saffron (small amount (it's so expensive))
  • Tarragon (2 tsp)
  • Olive Oil (drizzle)
  • Salt & Pepper (to taste)
  • Cauliflower (1 large or 2 small)
  • Parsley (handfull)
  • Onion (1 or 2)
  • Green Peas (cup)

Prepare the cauliflower in a food processor, don't over do it or you end up with mush. Just pulse it on and off until it looks like rice.

First fry your onion and garlic in a large saucepan in a drizzle of olive oil. Next add your other ingredients and stir gently. On a medium to high heat, this should about 10 to 15 minutes. If you are using mussels, be sure to make sure they open properly.

Serve with a handful of fresh parsley. If covered over with clingfilm, the dish will last well for 2 or 3 days in a fridge, but don't keep the mussels as you shouldn't reheat mussels.
