Cacao, different to Cocoa, refers to any of the food products derived from the cocoa bean which remains raw. As such it's unroasted and less processed, making it healthier. It's touted for its disease-fighting plant compounds, iron and antioxidants. As it's less processed and sweetened, it can be little bitter to, but many grow accustomed to the flavour and enjoy it as a snack or making more 'Primal' desserts!
