A blue cheese from the south of France. Its body colour is white, and it has a sharp tangy flavour. Roquefort's texture is very distinctive; it is moist yet crumbly. The cheese is created from sheep's milk and has a fairly unique production process in that officially it should be aged in a cave near Toulouse in the village of Roquefort.
