Shiitake is a brilliant mushrooms for its benefits when it comes to protecting the immune system, loweing blood cholesterol levels and as an anti-aging agent. They also contain beta-glucans which help reduce inflammation in the body and help prevent the intestines from absorbing cholesterol. All types of mushrooms are rich in protein, fibre and an excellent source of vitamins D, B, C, calcium, selenium and potassium. They support our immune system and, amongst other things, are said to help prevent certain cancers.
