These peanut butter bites take minutes to make and are incredible sandwiched together with chocolate. If you love peanut butter as much as I do, then these are a total winner. They are a perfect snack and would make delicious low carb profiteroles with some freshly whipped cream in the middle and a generous drizzle of chocolate. The texture of these bites are dense and fudgy. It is easy to hold them in your hand and they make a great grab and go treat. If you don't like peanut butter, then that is fine. You can replace it with almond butter or any other nut or seed butter. Just be mindful to recalculate your carb content. Best of all, you won't need any snazzy kitchen equipment and the prep time takes just ten minutes!

Ingredients

For the bites

  • smooth peanut butter (130g)
  • eggs (2 large)

To decorate

  • chocolate (70g)
  • peanut butter (2 tbsp)

METHOD

Preheat oven to 180C.
Whisk the smooth peanut butter and eggs together. It will go from a smooth caramel consistency to a thicker cookie dough.
Whisk the mixture until you get to that point.
Pop macaron sized dollops, spaced out, on to a greased baking sheet. I make approximately 18.
Bake for 5 mins on 180C. They should be soft but cooked through.
Carefully remove from oven.
Let them cool before decorating.

TO DECORATE

If you would like to decorate with chocolate then I suggest 60g chocolate (melted) which I add 2 tbsp peanut butter to.
Mix together.
I like to pop a dollop on the bottom of one peanut puff and then sandwich it together with another.
I then drizzle chocolate over the top.
These puffs can be frozen.
Store in sealed tub until required.
