Would you believe it if I told you this dish was almost 0 carbs per portion? Made with simple ingredients including, this really is incredibly simple. Tastes fantastic, full of flavour and texture. In this recipe I use konjac konjac flour. It is an incredibly dense fibre powder, so a little goes a long way. It is 0 carbs and 0 cals and works brilliantly in this dish.

  • Konjac konjac flour
  • butchers sausages
  • goose fat or beef dripping (6 tbsp)
  • double cream (110 ml)
  • whole milk (110 ml)
  • large eggs
  • ground linseed or ground almonds (15g)

Method

Preheat oven to 200C.
Add sausages to a deep baking dish (the same dish you will use for the batter), and pop in the oven for approximately 20 minutes until the sausages are golden and slightly browned.
Open the door and add 6 tbsp goose fat to the same dish with the sausages in (you want it to cover the base of the dish by about 1/2 a cm. Place carefully back in the oven for 4 minutes.
Make the batter.
Add the eggs, milk and double cream and whisk. Add in the fibre powder (konjac flour) and linseed and whisk.
Once the oil is ready, pour straight over the sausages.
Reduce heat to 180C
Place in the oven for 15mins. Have a peek and then continue to check for another 5 or so minutes until golden brown.
Carefully remove from the oven and serve.
