This is a dish I created as a starter, it was first made out of necessity, as I only had a few ingredients in the fridge. I decided to use my premade mixed Indian spices and it turned out delicious. Hope you enjoy it.

Ingredients

  • Minced Lamb (250g)
  • Aubergine
  • Garlic (2 cloves)
  • Shallots
  • Cheese (40g)
  • Chilli Flakes (1 tsp)
  • Ghee (1 tbsp)
  • Mint (a few leaves)
  • Mixed Indian Spice (2 tsp)

Method

Fry the lamb in ghee along with the mixed Indian spices, and then remove from the pan. Slice the aubergine and fry in the leftover oil. You will need to keep adding oil as the aubergine soaks it up quickly. Fry until slightly browned on each side. You need 3 slices per burger you make. There should be enough lamb to serve 3 or 4 people.

Warm the oven to about 180�C, sprinkle over cheese of your choice and put into the oven to melt. Takes just a few in minutes. Sprinkle with chilli flakes and a finishing touch with a little fresh mint.
