Having a Tupperware of roasted nuts to hand makes for a brilliant snack. Great to share with any guests, or to pop in to your lunch bag and take on the go. Nuts are low in carbs, healthy fats and full of nutritional goodness. Great for adding on top of curries / salads or stews or having as a breakfast with some scrambled eggs and avocado. You can of course, flavour them however you like. Curry powder, chilli powder or even a sweeter option like cinnamon gives them a delicious twist.

- mixed nuts (300g)
- olive oil (2 tsp)
- smoked paprika (1 tsp)
- ground cumin (1 tsp)
- sea salt (pinch)
- pepper (1 tsp)
Method
Preheat your oven to 180C.
In to a pot with a lid, place all the nuts and coat with olive oil. Shake around until all coated.
Add in the spices, sea salt and pepper.
Place them carefully on to a baking tray.
Bake for 6 mins, before giving the tray a careful shake. Bake for a further 6 minutes until the nuts are fragrant and golden. If they still need extra time then leave them in but keep a close eye on them.
Leave them to cool before placing in an air tight container, for up to 3 weeks.
