- carrot (200g, peeled)
- coconut oil or butter (1 tsp)
- red onion (200 g)
- garlic cloves (1, finely chopped (optional))
- kale (3 handfuls, chopped)
- eggs (4 large)
- lime (1/2, juice)
- black pepper (1/2 tsp)
- coriander (small handful)
Coarsely grate the carrot.
Melt the coconut oil or butter in a non-stick frying pan over medium- high heat.
Add the grated carrot and fry for 2-3 minutes until it softens. Add the red onion and garlic and fry for a further few minutes until the onion softens and turns pale
