One of the best meals for sharing. It is bright, vibrant and packed with flavour and texture. As well as protein and all the essential vitamins and nutrients. It is quick, smile and only one pan is needed, which is always a bonus when it comes to washing up! Perfect for slicing and sharing. Ingredients
- carrot (200g, peeled)
- coconut oil or butter (1 tsp)
- red onion (200 g)
- garlic cloves (1, finely chopped (optional))
- kale (3 handfuls, chopped)
- eggs (4 large)
- lime (1/2, juice)
- black pepper (1/2 tsp)
- coriander (small handful)
METHOD
Coarsely grate the carrot.
Melt the coconut oil or butter in a non-stick frying pan over medium- high heat.
Add the grated carrot and fry for 2-3 minutes until it softens. Add the red onion and garlic and fry for a further few minutes until the onion softens and turns pale
