Delicious duck roasted in a healthy plum sauce for a truly easy traybake dish. This is a go-to recipe for those craving a fakeaway during the week or weekend!

Ingredients

Duck in plum sauce

  • Oranges (2 large, juice only)
  • Orange slices (1 large orange)
  • Chinese spice (3 tbsp)
  • Chilli flakes (1 tsp)
  • Light soy sauce (4 tbsp)
  • Apple cider vinegar (1 tsp)
  • Agave nectar (3 tbsp)
  • Plums (6, halved)
  • Duck legs (2 cups)
  • Green veg (to serve)

Method

Preheat your oven to 200c/180c (fan) or gas mark 6.

Squeeze the juice of 2 oranges into a rectangle roasting tray and add the spices along with the soy sauce and apple cider vinegar.

Add the halved plums and orange slices to the tray and mix everything so the fruit is fully covered in the sauce.

Pop the tray in the middle of the oven to roast for 10 minutes. Remove from the oven and add the duck leggs, making sure to paste the sauce on the skin of the duck. Pop the dish back into the oven for another 65 minutes and make sure to baste the duck legs every 15 minutes. When cooked, remove from the oven and serve with green vegetables and salt and pepper to taste.
