This pudding takes me straight back to school, but without the high blood sugar! A decadent sponge with a sweet chocolate custard. Simple ingredients, quick to make and incredibly low in carbs.

Ingredients

Chocolate sponge cake

  • unsalted butter (125g)
  • powdered sweetener (erythritol) or sugar (50g)
  • coconut or brown sugar (20g)
  • eggs (2 large)
  • coconut flour (20g)
  • ground flax (50g)
  • milk (2 tbsp)
  • baking powder (1 tsp)
  • cocoa powder (20g)

Chocolate custard

  • double cream (200ml)
  • milk (70ml)
  • egg yolks (2 large)
  • powdered erythritol (sweetener) or sugar (40g)
  • cocoa powder (3 tbsp)

Method chocolate sponge

Preheat oven to 180C.
Grease a square baking tin or line with baking parchment. I use a 15 x 15 cm tin.
In to a food processor (or by hand), beat butter and sweetener (plus sugar) until light and fluffy. Add in eggs and milk, beating constantly.
Add in the ground flax, coconut flour, baking powder, cocoa powder and combine.
Bake for up to 25 minutes until a knife comes out clean. Leave to cool until required.

Method chocolate custard

Heat the cream, cocoa and milk in to a small pan until starting to bubble. Remove from the heat.
Separately, in a bowl, add the egg yolks, sweetener and whisk together. (tip: you could add half the sweetener and then add the rest to taste once all the ingredients are combined, that way you know how sweet you want it).
Slowly add in the cream, cocoa and milk mixture, whisking together.
Add the mixture back in to the pan. Bring to a low bubble and whisk until thickened. Remove from the heat. Have a taste. Add any extra sweetener, if needed.
Once you are ready to serve pop back on the heat to warm up before pouring over your chocolate sponge.

Notes

For the sponge:
If you would rather not use the added sugar then please use sweetener instead. I recommend using erythritol as a sweetener as it is like for like in weight used. But, if you would like to use another sweetener please just be mindful that you might want to use less. Have a taste and see!
Similarly- if you would rather not use sweetener, then please replace with sugar.

For the custard:
Use a powdered sweetener or sugar.
