We recommend using the best quality eggs you can, with a deep orange yolk, to give this custard all the ooh's and ahh's it deserves.

Ingredients

  • Frozen Peas (400g)
  • Fresh Mint (handful)
  • Garlic (1 clove)
  • Lemon
  • Salt (pinch)
  • Black Pepper (to taste)

Method

STEP 1
Finely grate the garlic clove and chop the fresh mint.

STEP 2

Cook the peas and garlic in boiling salted water for 3-4 minutes.

STEP 3

Drain well and mash roughly.

STEP 4

Stir in the mint , olive oil and squeeze the lemon juice to taste, season with black pepper
