Asparagus wrapped in streaky bacon with soft dippy boiled egg, is a fun and truly healthy dish that works equally spectacular as a breakfast, lunch or kids party delight.

Ingredients

  • Bacon (12 slices)
  • Asparagus
  • Eggs
  • Olive Oil (2 tbsp)

Method

STEP 1
Preheat the oven to 160 degrees. Cut the bottom off the asparagus.

STEP 2
Wrap the streaky bacon around the asparagus leaving the tips exposed.

STEP 3
Pan fry the asparagus in an ovenproof frying pan, with olive oil and colour evenly to get the bacon nice and crispy.

Step 4
Place in the oven at 160 degrees for 10 minutes.

Step 5
Fill a separate pan of water and heat until lightly boiling. Place the eggs in the water and cook for 4-5 minutes. Place the egg under cold water for 20 seconds and remove the top of the shell with a tea-spoon.

Step 6
Place the wrapped asparagus on a plate with the boiled egg, and enjoy a good dip.
