These dairy-free frozen banana lollies covered with peanut butter and dark chocolate taste just like a snickers ice-cream and are the perfect treat this summer. If you're fed up of baking banana bread with your leftover ripe bananas, then say hello to your new summer-friendly treat.

Ingredients

Snickers lollies

  • Ripe bananas
  • Peanut butter (1/4 cup)
  • Crushed peanuts (1 handful)
  • Dark chocolate (1 bar)

Method

Cut the ends off your bananas so they're flat. Pierce your bananas with a wooden ice-lolly stick and place in the freezer (on a tray with parchment paper) to harden for 45 minutes.

Once your bananas are cool, remove them from the freezer and cover in peanut butter and crushed peanuts. Once covered, pop back in the freezer for 30-60 minutes until hard.

10 minutes prior removing the bananas from the freezer, melt your dark chocolate in a bowl over a small saucepan filled with boiled water. Once melted, leave to cool slightly and then cover your peanut butter bananas with the chocolate. Cover all bananas and then place back on the tray before sprinkling with more crushed peanuts (if you wish). Place in the freezer to set for another 20-30 minutes and remove when ready to devour. Of course, all bananas must be kept in the freezer like regular ice-cream lollies.
