These saucy healthy homemade beans are sugar-free and a much healthier alternative to the classic supermarket beans, making them perfect for both big and little kids.

Ingredients

Baked beans

  • Chorizo (115g, diced)
  • Onion (1, diced)
  • Garlic (3 cloves, crushed)
  • Smoked paprika (1 tsp)
  • Mild chilli powder (1/2 tsp)
  • Cumin seeds (1 tsp)
  • Sundried tomatoes (4, chopped)
  • Borlotti beans (400g tin, drained and rinsed)
  • Cannellini beans (400g tin, drained and rinsed)
  • Reduced salt soy sauce (1 tbsp)
  • Chilli flakes (1 tsp)
  • Apple cider vinegar (1 tsp)
  • Salt and pepper (To taste)

Method

Begin by heating a pan on medium heat and add the chorizo.

Fry until the chorizo begins to lose its oil.

Remove the chorizo from the pan and set in a bowl to the side.

Add the onion, garlic and spices and saute for a few minutes.

Add the tinned tomatoes and sundried tomatoes and simmer for 10 minutes.

Add in the beans and cook for a further 10 minutes - adding in the chorizo halfway through.

Add the soy sauce, vinegar, coconut sugar and chilli, mix and simmer for a few minutes more. Season to taste.

Plate up with your favourite breakfast additions and serve straight away.

These homemade chorizo baked beans are best kept in an air-tight container in the fridge for a couple of days. Enjoy!
