Pizza and pancakes = a match made in food heaven for many. And if you love both, then my low carb chorizo pizza pancake recipe will be the perfect weekend fakeaway for you and the family.


Pizza base

  • Eggs (2, whisked)
  • Cheddar Cheese (112g, grated)
  • Oregano (Pinch)
  • Parmesan (30ml, grated)

Pizza toppings

  • Tomato puree (2 tbsp)
  • Chorizo (8-10 slices)
  • Mozzarella cheese per pizza (1-2cm, torn into pieces)
  • Basil (To garnish)


Preheat your oven to 200c.

Begin by adding the eggs, cheddar and parmesan cheese and oregano to a bowl and mix everything together.

Preheat a pan with a little oil. Add half of the mixture to the pan and heat on medium heat for 2-4 minutes (or until your pancake starts to form bubbles). Once the bottom of your pancake has cooked, flip your pancake over and repeat the same cooking process on the other side. Once cooked, gently slide the pancake out of the pan and onto a baking tray. Repeat this process with the second half of your pizza mixture.

Once both pancakes are cooked, add 2 tbsp of tomato sauce to each pizza and top with the chorizo slices and mozzarella cheese. You may wish to season with pepper and salt if you choose to.

Pop the pizza's into the oven and cook for 5 minutes (or until the cheese has melted on top). Remove from the oven and garnish with basil and serve.
