These peppermint things are incredibly similar to After Eights. They have a sweet creamy, minty centre combined with the dark chocolate. The perfect low carb sweet treat which contains healthy fats, protein and antioxidants. They are perfect to have in the fridge for whenever the sweet moment strikes.



  • high % dark chocolate (100g)
  • peppermint essence (1 tsp)
  • powdered sweetener (10g)
  • cream cheese (45g)


In to a glass bowl, melt 100g chocolate.
On to greaseproof paper add one tablespoon chocolate. Repeat until you have approximately 8 rounds.
Place in the fridge.
Whilst the chocolate is setting in the fridge, place cream cheese, erythritol and peppermint oil in to a clean bowl.
Mix together well and have a taste. If you need more sweetener, add it. If you need more peppermint essence, add it. I suggest to add both ingredients little by little until you are happy with the taste.
Once the chocolate is set remove from the fridge.
Place a dollop of mint cream on to each chocolate thin and use the remaining melted chocolate to drizzle over the top. Place back in the fridge to set.
Serve when set. Keep in a sealed container in the fridge for up to 1 week.


You can replace the cream cheese with extra thick double cream if you would prefer.
