Forget buying pesto sauce in the shops, you never know what additional things they have put in. Making your own is so easy and can be done in minutes - plus you can keep it in the fridge for up to a week and for up to 6 months in the freezer. Next time you have some leftover basil, be sure to give this recipe a go it's much more vibrant and fresh than supermarket presto and you know exactly what went into yours. It works brilliantly on our pesto pizza.

Ingredients

  • Basil (1 cup)
  • Garlic (3 or 4 cloves)
  • Pine Nuts (3 tbsp)
  • Parmesan (25g grated)
  • Olive Oil (40g)
  • Salt & Pepper (to taste)

Method

This is such a simple dish to make. Except from the olive oil, put everything together inside your food processor. Pour in the olive oil as you blend it together. Don't over do it, as the pine nuts become too mushy. Maybe try and pulse it just 5 to 6 times.
