Incredibly quick and easy pancakes that are incredibly versatile. Whether you want them sweet or savoury, they are yours to adapt. Fill them with mince, roll up and scatter with cheese before baking, or serve plain for breakfast with a homemade berry compote and greek yoghurt. The only thing that is vital for this recipe is a decent non stick pan! Great for breakfast, lunch, dinner or as a snack on the go. They have the same texture as grain based pancakes but without the carb overload. I make 4 large pancakes from this mixture, but if you would like to make them smaller you could easily get 8. Double the recipe to make more.
Ingredients
- cream cheese (55g)
- ground flax (or other ground seed mix) (10g)
- eggs (1 large)
- arrowroot (15g)
- sweetener, spices or herbs (see notes)
- coconut oil (2 tsp)
- milk (20g)
Method
In to a bowl, place the cream cheese, milk and egg. Whisk together until smooth.
Now add in the ground flax / seed mix and arrowroot (and optional sweetener / herbs / spices).
Place some coconut oil in a pan over high heat. Allow it to melt.
Now add a feat tablespoons at a time and, if you are confident smooth in to a round pancake using the back of the spoon.
Allow the underside to cook (approx 1-2 mins) before flipping over and cooking the other side for 30-60 seconds.
Place on to a warm plate.
Repeat until you have used all the mixture.
Serve with what ever you like.
(If you are going to fill them with something and then bake then make sure the filling is already cooked. You will then roll the filling in the pancake and bake for a maximum of 15 minutes, so not to burn the pancake)
Notes
If you are adding herbs / spices or sweetener to the pancake mixture then my suggestions are:
for spices: add 1/2 tsp max plus 1 pinch sea salt.
for sweetener : 1 tsp (maximum).
for herbs : 1 tsp.
