A quick and easy one pan dish. From pan to plate in just 15 minutes. This dish ticks all the boxes as it is packed with flavour, low in carbs and very filling. The spice, combined with the saltiness of the miso is a match made in heaven with the pork balls. It is a takeaway tasting dish that's good for you!

Ingredients

  • olive oil (50g)
  • red onion (1 large, sliced)
  • sausage meat (300g, rolled in to balls)
  • pepper (1 medium, sliced)
  • miso paste (2 tsp)
  • cayenne (1/4 tsp)
  • salt (pinch)
  • black pepper (pinch)
  • kale (3 handfuls, chopped)
  • garlic paste (1 tsp)

Method

In to a deep pan, over high heat add some olive oil.
Fry off the onion and pepper for 3 - 4 minutes until soft. Add in the garlic and continue to cook.
Roll the pork in to small bitesized balls and add in to the onion mix. Carefully stir through, but be careful not to break the balls up.
As they cook, add in the cayenne and miso. Coat the veg and pork in the miso and cayenne.
Finally add in the kale and fry for 3 minutes until softened. Check one of the pork balls to ensure cooked through and then serve straight away.

Notes

I serve this dish with black bean spaghetti, which is very low in carbohydrates. You could serve it with something similar or alternatively roasted vegetables, courgette noodles etc.
