Alongside knowing what is in your food and where it comes from, eating seasonal is also more important than ever. Tomatoes are very easy to grow at home, whether on a balcony, a garden, or a sunny windowsill. This dish is incredibly simple but really showcases just how delicious tomatoes are in combination with onion, garlic and zingy lime.
- shallot, finely diced (30g)
- cherry tomatoes, halved (150g)
- garlic, crushed (3 cloves)
- coriander, fresh and chopped (2 tbsp)
- olive oil (1 tbsp)
- lime juice (1 tbsp)
- sea salt (pinch)
Create the dish a few hours prior to serving, or just create and serve. Leaving the dish made up for a few hours, gives the garlic time to infuse in to the tomato, but it isn't a necessity.
Put the tomato, crushed garlic and shallot in to a bowl, mix together so that the tomato is coated in the mixture.
Add in all other ingredients and combine.
Transfer to a serving dish and enjoy! Brilliant served with some grilled fish or a juicy steak.
