This is great to serve alongside fish cakes or other Thai dishes. It is not intended as a dish in its own right.


  • Cucumber (half chopped)
  • Spring Onion (5 chopped)
  • Coriander (1 cup)
  • Lemongrass (1/2 stick chopped)
  • Ginger (1 tbsp finely chopped)
  • Garlic (2 cloves chopped)
  • Red Chilli (1 finely sliced)
  • Red Onion (1 or 2 chopped)
  • Red Bell Pepper (1 chopped)
  • Fish Sauce (4 tbsp)
  • Lime Sauce (4 tbsp)
  • Stevia (1/2 tsp)
  • Salt & Pepper (to taste)


Mix all the of the ingredients together. If you want it hotter add more chopped chilli, if you don't want it spicy, but just love the fragrance, then you can drop the chilli completely.

It works best if it can sit in the fridge to marinade for an hour or so before serving
