Made from the fat surronding a pigs stomach, lard is most definitely a Primal fat. When it comes to heating lard, a smoke point of 188 celsius is advised. Lard also contains about one third as much cholesterol as butter - which isn't bad for us! Our bodies need fat to absord the fat-soluble vitamins, D, E, A and K. 1 tablespoon of lard also contains 1,000 IU's of vitamin D.
