Snacks | Quick | Minimal Ingredients

A super simple, low carb, nutritious and delicious way to enjoy your blackberries. Great for the whole family. There is definitely a novelty factor peeling back the greaseproof paper from the fruit leather which children especially love. If you are not fans of blackberries then just use blueberries, strawberries or raspberries.

Ingredients

  • fresh blackberries (200g)
  • raw honey (1 tbsp)
  • lemon juice (1 tbsp)

Method

Turn your oven on to 50C. This is likely the lowest setting on your oven.
In to a nutribullet or food processor, blitz all your ingredients to a pourable smoothie type consistency.
Lay on to a flat, greaseproof paper sheet on a baking sheet. Smooth out in to an A4 sized shape.
Pop in the oven and leave for approximately 7 hours. It may be a little less, you'll just have to keep an eye on them. They will have shrunk and be dry to touch when they are ready. You will be able to lift up one end and peel them off at once.
Once ready cut in to strips, roll up and keep in a sealed container until required.

Notes

You can replace honey with a liquid sweetener or a powdered sweetener, honey works best for the consistency. If you don't want the pips then you will need to strain the mix before you pour it on to the baking sheet.
