You won't believe how easy and quick these are. Just like the real thing. In fact, having tested these on numerous obliging tummies, I have been told it is impossible to tell the difference. Smothered in cream cheese, with a slice of smoked salmon and some chopped up chives, these really are quite spectacular. Now, they don't have to be savoury, you can also make them sweet with a little chocolate and cream on top, or use the recipe to make in to bigger pancakes.

  • greek yoghurt (50g)
  • large egg (1 large)
  • milk (10g)
  • arrowroot (25g)
  • ground almonds (15g)
  • baking powder (1tsp)
  • olive oil (1 tsp)

Combine all ingredients in to a bowl and mix to a batter.
Using a clean pan over medium-high heat, add a little oil, let it warm up and then using kitchen towels carefully wipe it clean.
Spoon circular dollops of batter on to the pan and cook for approx a minute on each side until cooked. Flip and cook the other side.
Pop straight on to a plate to cool.
Once you have used all the mixture you will be able to dress your blinis.
