Delicious chocolate brownies. A simple recipe using easy to source, nutritious ingredients. One to make for friends, share with family and enjoy when you need it. Keeping the carbs very low and your blood sugar nice and stable.

- unsalted butter (190g)
- dark chocolate (100g)
- ground almonds (70g)
- large eggs
- baking powder (1/2 tsp)
- granulated sweetener or sugar (25g)
- cocoa powder (30g)
Method
Preheat the oven to 180C.
You will be needing a 2lb loaf tin, or a square brownie tin. I tend to use silicone for baking but if you do not have this, please grease what you have to hand.
In a mixing bowl, add all your dry ingredients, ground almonds, baking powder, sweetener and cocoa powder. Mix together.
Melt 60g of the chocolate. Add in the butter and stir in until all melted together. Pour in to the dry mix along with the eggs. Beat in to form a thick batter.
Chop up the last bit of chocolate and fold in to the batter.
Spoon in to the loaf tin and bake in the oven for approximately 15minutes to ensure you still have a gooey centre.
Remove from the oven and leave to cool on the side until you can remove carefully and pop on a wire rack to completely cool, slice and serve.
Notes
Keep on the side, covered for up to 3 days. Or keep in the fridge for up to 6 days.
