A brilliant alternative to a grain based granola. This is grain-free and low-carb, made with simple ingredients that you probably already have in your cupboard. Make it on a Sunday night, ready for super quick breakfasts during the week ahead. It also makes a beautiful gift for friends or family. Serve it with cold milk from the fridge, or on top of some Greek yoghurt. Alternatively, it makes a great snack straight from the bag. We like to add freeze dried blueberries but you could add anything you like: chocolate, cacao nibs, berries, orange zest.

- mixed nuts (180g)
- mixed seeds (120g)
- coconut oil (2 tbsp)
- ground cinnamon (1 tbsp)
- powdered sweetener (1 tbsp)
- flaked coconut (65g)
- ground brown flax (40g)
- freeze dried blueberries (25g)
Method
Preheat your oven to 180C.
Into a deep baking dish, place the mixed nuts and put in to the oven for 10 minutes until starting to turn a pale golden colour.
Now add in 2 tbsp coconut oil and the mixed seeds. Mix all together and continue baking for another 4-5 minutes (keep an eye on them) before adding in the coconut flakes.
Bake for another few minutes until toasted. Stir through the cinnamon, sweetener, ground flax and bake for a final couple of minutes or so.
Remove from the oven stir through the freeze-dried blueberries and allow to cool completely before storing in an airtight container.
Notes
Every oven is different so please keep an eye on your temperature / how quickly your granola bakes.You might need to increase / decrease the cooking time. Just keep a close eye on it.
A serving is suggested as 35g, so approximately 11 servings per recipe.
We use powdered erythritol in ours.
