A smooth and creamy mayonnaise made with real food, simple ingredients. This is super easy to make with only 5 key ingredients. No nasties and no additives. Slather it on homemade burgers, dip home-made celeriac chips in it or why not make your own coleslaw to share with the family! Don't reach for the "fat free" or "low sugar" versions on the shop shelves, instead make it on your own in 5 minutes, it's worth it- I promise. Feel free to add in some fresh or dried herbs for an added twist!

Ingredients

  • lemon (1/2, juiced)
  • LIGHT olive oil (1 cup)
  • apple cider vinegar (1 tbsp)
  • egg (1 large, room temp)
  • sea salt (1/2 tsp)

Method

In to a deep jar or bowl place the oil followed by the egg and then the rest of the ingredients.
If you are using a hand blender (immersion blender) place the blender to the bottom of the jar / dish and blend, it will immediately thicken and turn in to a mayonnaise colour and consistency.
I would blend for at least 1 minute to ensure a very smooth and creamy texture.
Have a taste test and add any extra salt / lemon juice to your taste.
Spoon in to an airtight jar and keep in the fridge for up to 14 days.

Notes

Keep in a sealed jar in the fridge.
Use within 10 days.
You can replace the LIGHT olive oil for avocado oil. But, please, please, only use LIGHT olive oil otherwise.
You can use a hand whisk if you do not have an electric hand blender. It might just take you a little longer. You will need to whisk it in a metal bowl or a glass bowl.
