One of the fines and healthiest cheeses is the delicious Camembert. This is an awesome starter, especially around Christmas time. Cranberries are not only delicious, they are also a superfood when it comes nutrient density. They are jam packed full of vitamin C and vitamin k (hard to get sufficient k in most diets), fiber and antioxidants. In fact when it comes to antioxidants, Cranberries outrank almost every fruit and vegetable .
Ingredients
The Sauce
- Cranberries (300g)
- Apple
- Lemon Juice (1 tbsp)
- Cinnamon (2 tsp)
- Vanilla (1 tsp)
- Stevia (1 tsp)
- c8 oil (1 tbsp)
The Sauce
1. Heat a tablespoon of c8 oil (or coconut oil).
2. Then put all the ingredients in together and reduce heat to medium-low, cover with a lid (try and get a lid with a small hole to let the moisture out), and simmer. Every 10 minutes or so give it a stir and cook for about 40 minutes..
3. You have 2 options here, if you want it more jammy, then put all the ingredients in a blender or you can crush the cranberries in the saucepan. If I am using it as a jam, I blend, but if I am using it as a side to cheese or my pate, then I crush the berries.
Let cool completely and transfer to a jar. As long as you can seal it tightly, it should last for about 5 weeks in the fridge.
