A flavourful, quick recipe, that doesn't require hours of soaking. You will require a food processor for this recipe to create the perfect "whip" but it is absolutely worth it. Think Boursin meets hummus. Low in carbs, creamy and one you are going to adore dipping your crudit�s in.

Ingredients

  • cashew nuts (200g)
  • lemon juice (1 tbsp)
  • fresh garlic (1tbsp puree)
  • sea salt (pinch)
  • black pepper (1/2 tsp)
  • water

Method

In to a bowl add the cashew nuts. Cover with water, pop a little foil on top and leave to soak for 120mins.
Drain the water and pop in a food processor wit the lemon juice, garlic, seal salt and pepper.
Pulse to break the cashews down until you have a crumbled consistency. Scrape down the sides of the food processor.
On a high speed, add a little water (about 2 tbsp at a time), on a until the cashew cheese is a smooth, thick, whipped consistency. Similar to hummus.
Have a taste. Add in extra lemon or sea salt to taste.
Pop in to an airtight container and keep in the fridge. Serve cold. Eat within 5 days.
