A simple, flavour packed, nutritious breakfast or lunch option. A great way to break a fast too. Low in carbs, high in healthy fats and protein. If gruyere isn't the cheese for you then you can replace with cheddar or mozzarella or any other cheese of choice. This is your dish, be creative with it!

  • eggs (3 large)
  • gruyere (40g, grated)
  • mushrooms (5, sliced)
  • olive oil (1 tsp)
  • sea salt (to taste)
  • pepper (to taste)
  • chives (2 tsp, fresh, chopped)

Method

In a glass bowl, whisk the eggs and 20g grated gruyere and set aside.
Heat 1 teaspoon olive oil over medium-high heat in a frying pan.
Add sliced mushrooms and sauté until golden brown. Approximately 2-3 minutes.
Transfer mushrooms to a small bowl set aside.
Add the eggs and using a spatula to push the egg that has set, so the uncooked eggs run into the empty part of the pan. Continue pushing back the cooked eggs and tilting pan until omelet top is wet, but not runny.
Reduce heat to low.
Sprinkle remaining cheese, mushrooms, chives. Season with sea salt and pepper
Fold the omelet over the toppings.
Roll onto a place and serve immediately.
