Some days I wake up and think this is my favourite flexible vegetable and then have to pinch myself and remind myself that that title belongs to the cauliflower. However, once you have mastered celeriac chips, cubes and roastes, then it also makes a superb mash.
- Cream (5 tbsp)
- Butter (2 tbsp)
- Black Pepper (Pinch)
- Rosemary (1 tbsp)
How to Prepare
Peel the celeriac and cut into chunks and cover in water, add some salt and bring to boil for 15 to 20 mins. Its cooked when you can easily slices through them with a knife,
Drain the water, add butter and cream. And ten either mash them or use a hand blender (depends whether you want a smooth texture or not).
Jazz them up with either black pepper, horseradish, garlic or your favourite herbs. I think it tastes awesome with thyme or rosemary.
