With lockdown lifting and gatherings allowed to start happening, thinking up tasty low carb snacks for everyone to enjoy can be a challenge. Yet, there are endless options out there. Hopefully, this recipe will really inspire you. These cheese and chilli cubes are so simple, delicious and easy to make. Make them in advance, pop in a Tupperware and keep in the fridge until required. A great way to allow the flavours of cheese and chilli marinade together. If you don't have dried chillies and apple cider vinegar to hand then you can use a few spoonfuls from a jar of "lazy chillies". Just always check the back to be sure of the ingredients you are using.

Ingredients

  • red chilli flakes (4 tsp)
  • apple cider vinegar (1 tbsp)
  • mature cheddar cheese (200g)

Method

Chop up your cheese in to edible bite sized cubes.
Pop in a bowl.
In to a small bowl add the dried chilli flakes with the apple cider vinegar and mix together.
You want to add enough apple cider vinegar so that you have relatively thick consistency, but one that will spread easily over the cheese.
Now add in your cheese and coat well in the chilli mixture.
Place in the fridge in a sealed container ready for when required.
Brilliant for adding to salads / eating as a snack or having as a great low carb option at a gathering.

Notes

If you would rather use shop bought chillies then do so. Opt for a "lazy chilli" or "easy chilli" brand.
