A delicious dish that is quick to prepare, full of flavour, light and awesomely healthy. What more could you ask for?

Ingredients

  • Chicken Breast
  • Konjac Noodles (400g)
  • Coriander (bunch)
  • Red Onion
  • Garlic (6 cloves)
  • Coconut Milk (400g)
  • Lemon
  • Red Chilli
  • Black Pepper (sprinkle)
  • Coconut Oil (1 tbsp)

Method

Cut the chicken into thin strips and either boil them for 15 to 20 minutes or fry them in a pan. What method you choose depends on how soft you want your chicken and whether you prefer it browned. In this recipe I boiled mine first.

While the chicken is boiling, grate your garlic, chop you coriander stalks into small pieces, dice your onion and wash your noodles.

First fry your garlic in either olive oil or coconut oil for about a minute, then add your onions, coriander stalks, coconut milk (I start with half the can and add more if I feel I need it), juice of a lemon and stir for a minute or so. Then add your noodles and chicken, plus a little black pepper and stir for 2 minutes. Garnish with coriander.


If you want to experiment with flavour you could try adding NKD syrup or a small amount of curry paste.
