Dinner | Fibre

A really simple dish to create, full of flavour, looks fine dining and virtually CARB free. By adding the syrup, the kids love the sweetness of this dish and it is a perfect way for getting the whole family to enjoy eating little to no CARBS. It can also be cooked in one pan, so little washing up is needed!

Ingredients

  • Pork Tenderloin (800g)
  • NKD Syrup (4 tbsp)
  • Shiitake Mushroom (120g)
  • Konjac Noodles (400g)
  • Coriander (bunch)
  • Red Chilli Peper
  • Garlic (4 cloves)
  • Spring Onion
  • Black Pepper (sprinkle)
  • Coconut Oil (1 tbsp)

Method

You can either slice the pork into thin slices or I tend to cut into each serving size (about half of one piece) and then place 2 chop sticks on my cutting board and cut down till I touch the chopping sticks. This way you cut through about 90% but keep it as one piece. I then add a little coconut oil to my pan, bring it to heat, add the chopped garlic and a squirt of NKD syrup and then fry the pork, turning after about 5 minutes.

Once the pork starts to brown all over, add your diced spring onions, sliced mushrooms and coriander (don't be afraid to add a few chopped coriander stalks too) and cook for a few minutes more. At this point I tend to squirt in some more syrup.

You can either add your sliced red chilli to the pan and slightly cook it, or if you have some in your family that don't like heat, then add it as a garnish afterwards.

As everything starts to look cooked, add in your noodles and stir for a further 2 minutes. Garnish with black pepper, coriander and red chilli slices.
