If you're a waffle lover and thought that transitioning to a Primal lifestyle meant that you had to give up your beloved pancakes with carbs, then think again. Thanks to our garlic mushrooms and smoked salmon topped waffles recipe, you can enjoy waffles the Primal way. To make the waffles themselves, you'll need only three ingredients: cream cheese, eggs and a little coconut flour. They're light, filling, full of delicate flavours that complement the salmon and garlic mushrooms and overall, this dish is packed with healthy fats and protein.

Ingredients

  • Cream Cheese (natural)
  • Eggs (large)
  • Coconut Flour
  • Dill (optional)
  • Mushrooms (large and sliced)
  • Garlic (finely chopped cloves)
  • Black Pepper (pinch)
  • Spinach

Method

Begin by mixing the cream cheese, eggs , coconut flour and 2 pinches of pepper together in a blender.
Once blended, pour the waffle mixture onto your hot waffle iron and close. Cook until your waffle maker instructs you to lift the griddle. Repeat this process until you've used up all your mixture.
Whilst your waffles are cooking, heat a pan with extra virgin olive oil and add the sliced mushrooms with the garlic. Cook until golden and soft. Add the spinach and wilt.
Serve your waffles up between two plates and evenly split the spinach, mushrooms and salmon (2 slices each) onto each plate. Add the dill on top of the salmon and sprinkle with the rest of your pepper across both plates. Dig in!
