These easy, healthy & low-carb grilled pork chops are the perfect summertime dish served with a refreshing peach salsa. This recipe can also be made in just 20 minutes, so it makes for a great midweek dinner too!

Ingredients

Seasoning

  • Jerk seasoning (sugar free) (1/2 tsp)
  • Dried thyme (1/2 tsp)
  • Dried rosemary (1/2 tsp)
  • Extra virgin olive oil (1 tbsp)
  • Pork chops

Salsa

  • Lime juice (1 tbsp)
  • Avocado (1/2, diced)
  • Peaches (2, pitted and sliced in half)
  • Extra virgin olive oil (2 tsp)
  • Red onion (1/2, diced)
  • Tomato (1 large, diced)
  • Fresh coriander (2 tbsp, chopped)
  • Salt and pepper (to taste)

Method

Season the pork all over with the seasoning ingredients and heat a grill pan to medium heat with a little extra virgin olive oil.
Add the pork chops and sliced peaces (cut side down) to the pan and leave to cook for 5 minutes. If the peaches are golden, remove from the pan. Flip the pork chops over and cook for a further 5 minutes.
While the pork continues to cook, place all of the salsa ingredients into a bowl and mix together. Once the peaches have cooled, dice them up and add them to the salsa mix. Mix again.
Once the pork has cooked, remove from the pan and serve on a plate. Add a generous serving of the peach salsa and any extra coriander (fresh). Serve with lime wedges and enjoy!
