Juicy Portobello mushrooms stuffed with Indian spice pork, is an absolute winner for guests who like life a little spicy. You can also cook the exact same dish with minced beef or minced chicken.

Ingredients

  • Juicy Portobello Mushrooms
  • Minced Pork (500g)
  • Mixed Indian Spices (1 or 2 tbsp)
  • Coriander (to garnish)
  • Ghee (1tbsp)
  • Cherry Tomato

Method

If you have pre-made your Indian spices (see recipe under sauces), this dish is super quick to prepare.

Simply fry up your minced pork in ghee and add your spices. Delicately remove the stalk of the mushroom, so as to be able to load even more pork.

Once the pork is cooked, add it to the top of the mushroom and cook in the oven for about 20 minutes at 200c.

Garnish with coriander.

Tip: for something a little different fry up a slice of aubergine and add on top or even a slice of Kohlrabi. You could even then drizzle over a little chilli sauce.
