This is such a quick pate to make and completely packed with flavour and loads of Omega3. it tastes best with Philadelphia cheese and the more you add the creamier the taste. Although it doesn't say it on the label apparently there are some chemicals used in the process to make the cheese, so if you are living completely primal, then you can always use Camembert instead.

Ingredients

  • Mackerel Fillets
  • Philadelphia Cheese (180g)
  • Fresh Chilli (1/2)
  • Lemon Juice (4 tbsp)
  • Parsley or Coriander (1/4 cup)

Method

Buy some pre-cooked mackerel (I tend to bulk make this on a Sunday, I buy 2 smoked and 2 unsmoked filets - but either work great - even peppered tastes delicious), peel off the skins.

In a food processor whizz the mackerel fillets, the Philadelphia, lemon juice, sliced peppers and some of the parsley and salt and pepper. Taste and if necessary add more salt and pepper, then scrape into a serving bowl.

Sprinkle with parsley (or other chopped herbs), and black pepper.

Great with our Primal crackers.
