The most divine, simple, child and adult friendly cheese bites that take next to no time to make, but are packed to the brim with flavour. Grain free, gluten free, made with real food ingredients and suitable for anyone following a primal lifestyle. These are incredibly low in carbs, so make for the most moreish snack. It is almost impossible to believe that there are 0.08g carbs per bite!? This recipe makes 8 small, hand held bites. You can make them smaller or bigger if you like. You could even double the recipe to make enough to share with a few others. Try them once and then be creative and try adding your own variations. From chilli to chives, smoked paprika and a generous dose of garlic. For those allergic to ground almonds, you can replace with ground linseed and achieved the same delicious result.

Ingredients

INGREDIENTS

  • ground almonds (15g)
  • grated parmesan (30g)
  • baking powder (1 tsp)
  • egg white (1 large, whisked and frothy)
  • egg yolk (1 large)

METHOD

Preheat oven to 180C.
Add all ingredients other than egg yolk. Combine well.
Leave to stand for 1 minute.
Mould in to little balls and press to flatten a little.
Pop in oven on greaseproof paper (make sure they are spaced out) and bake for 8 mins.
Remove carefully and brush tops with yolks.
Add a sprinkle more of parmesan.
Put back in oven for 2-3 more mins.
Remove carefully.
Allow to cool and enjoy.
