If we told you that the whole pizza base contained 1.8g carbs, would you believe us? It's true. Hard to believe, but totally true. If you are missing pizza then this parmesan base pizza recipe will certainly be your new favourite. It is as quick to make as a shop bought pizza. Has far more flavour, a similar "bite" and yet, it contains only a handful of ingredients, all of which are simple, real food ingredients. Totally grain free and gluten free, this recipe is incredibly tasty and won't take your blood sugars on a rollercoaster ride, like a normal takeaway or shop bought pizza would. It is the perfect "fakeaway" pizza and it will certainly become one of your weekly, super quick, go-to meals. Enjoyed for lunch, dinner or as a snack. You can be inventive with your toppings. We have shared our homemade tomato sauce ingredients below too, if you would like to use that. If you are looking for some low carb suggestions, then a few of our favourites would be: shredded chicken, feta, bacon, chorizo, red onion, capers, black or green olives, sun-dried tomatoes, gherkins, anchovies, tuna, pepper or how about a few dollops of homemade pesto? If you choose to slice this pizza up and share it with a friend, then serve with a delicious salad or some roasted veggies. It is delicious straight from the oven or enjoyed cold straight from your lunchbox!
Ingredients
PAREMESAN PIZZA BASE INGREDIENTS
- parmesan (50g)
- egg whites (2 large)
- ground almonds (30g)
- baking powder (1 tsp)
TOMATO SAUCE INGREDIENTS
- tin organic tomatoes (400ml)
- paprika (1 tsp)
- sea salt (1 pinch)
- garlic (1 tsp, minced)
- mixed herbs (1 tsp)
BASE METHOD
Preheat oven to 180c.
Combine whisked egg whites, ground almonds, baking powder and parmesan and mix together.
Carefully spoon on to greaseproof paper in a pizza shape.
Flatten with your hands if easier. It is a little wet. I find that using the back of a spoon of popping some water on my hand to smooth it out helps.
Bake for 10 mins.
Add tomato sauce, toppings and then bake for further 5 mins.
SAUCE TOPPING METHOD
Bubble up all the sauce ingredients and then reduce to a simmer until thick. This should take approximately 15-20 minutes.
You can keep it in the fridge in a glass jar or Tupperware for up to 7 days.
Best cooked before you put on the pizza and left to cool.
