An unusual pairing perhaps, but friends and family will fall in love with these naughty prosciutto-wrapped dates stuffed with goat's cheese. Thanks to their sweet and salty flavour, they're delicious and require only 3 ingredients to make. Please note, if you're aiming for ketosis then this recipe is to be consumed in moderation as each date contains roughly 16g of natural sugar.

  • Medjool dates
  • Goats cheese (25g, or enough to fill each date)
  • Prosciutto (5 slices)

Method

Begin by preheating your oven to 190c.

Slice each date lengthways and remove the stone.

Once done, cut the goats cheese into even rectangles so they'll be able to fit into each date and place a rectangle of cheese into each date.

Cut each slice of prosciutto lengthways and one by one, wrap around each date. I like it so the prosciutto covers the entire date with only the ends poking out. If you prefer a less salty taste, then make sure your strips are skinner.

Add the wrapped dates to a lined baking tray and place in the middle of the oven to cook for 15 minutes.

Once the prosciutto is crispy, remove the dates from the oven and leave to cool slightly before serving. Tip, serve them with cranberry sauce for an extra oomph of sweetness.
