Thanks to the gorgeously sweet and caramel like flavour from the Medjool dates, these almond butter stuffed dates coated in dark chocolate are the perfect sweet treat when you fancy something a little indulgent. What I love most about this recipe is the fact it's free from any refined sugar, contains only 3 ingredients and tastes anything but healthy.
- Medjool dates
- Smooth Almond Butter (10 tsp)
- Dark Chocolate (90-100g, 85%)
Begin by slicing the medjool dates lengthways and removing their stones. In the slit, add a teaspoon of smooth almond butter to each date and place on a wire rack.
In a microwave on medium heat, melt your chocolate in a microwaveable bowl.
Pour the melted chocolate over each date and once covered evenly, place in the fridge to set for an hour.
Once set, remove from the oven a add a touch of sea salt if you wish.
Dig in & enjoy!
Note: These dates are best kept in an airtight container in the fridge for a few days.
