Do not be afraid of tinned fish. It is brilliant. Cheaper, contains roughly the same nutritional value as fresh fish and it is incredibly versatile. Easy to transport and have on the go with a shop bought salad, or whizzed up with some celeriac and wrapped round an egg for a super simple and quick scotch egg with a fish twist! Mackerel is my favourite tinned fish. I tend to buy it in brine or olive oil. This salad is such a simple one, but it really is a salad of taste, texture, colour and packed to the brim with nutrition.

Ingredients

  • mackerel, tinned or fresh (200g)
  • green olives (50g)
  • kale (4 handfuls)
  • sun-dried tomato (40g)
  • avocado, sliced (1/2 medium)
  • cashew nuts (2 tbsp)
  • chill flakes (1 tsp)
  • capers (2 tsp)
  • olive oil (1 tbsp)

Method

In to a deep mixing bowl add kale, olive oil, chilli flakes and lemon. Massage in to the kale and leave for a couple of minutes. The lemon alone will "soften" the kale a little.
Now you can add in all the remaining ingredients.
Give it a good toss and serve!
