The most simple cake recipe that contains only "good for you" ingredients. Who knew a cake could be so kind!? This is one recipe you are going to want to make weekly! It is the perfect cake for anyone visiting. You can replace the orange with lemon if you wish, or just leave any added flavour out. You could even stud with dark chocolate for a glorious chocolate orange cake.

Ingredients

  • ground almonds (120g)
  • powdered sweetener (30g)
  • eggs (3 large)
  • milk (60ml)
  • orange extract (2 tsp)
  • orange zest (1 tsp)
  • coconut flour (20g)
  • baking powder (2 tsp)

Method

Pre heat oven to 180C.
In to a deep mixing bowl add dry ingredients and combine.
In a separate bowl add wet ingredients (egg, milk, orange extract, orange zest, and whisk up).
Have a greased cake tin ready. I suggest using a 2lb loaf tin but you could make a higher sided cake if you would prefer, or a round one.
Make a well in the dry ingredients and pour in the wet ingredients. Stir well until you have a thick batter.
Pour the batter in to the cake tin and bake for approximately 20 minutes. If your cake is higher (for eg, if you are using a 1lb loaf tin) then you will need to add some extra baking time.
Once cake is firm to touch, remove from oven carefully and set aside too cool.
Decorate however you wish. I use powdered erythritol (icing sugar substitute), which I add a little water to to form a pourable paste. Once the cake is completely cool, I drizzle it on top.
