A family favourite in our household and one that I hope you will love as well. This is a hearty and nourishing stew, packed with flavour and texture. It is a meal you can make in advance and freeze, or enjoy straight from the pot. What is even better is that it is a one pot dish! It can be whipped up in less than 20 minutes and best served with some buttery greens and maybe even a slice of my garlic bread, if you fancy it!

  • sausage meat (8 sausages, skin removed and chopped)
  • red onion (1 medium)
  • yellow pepper (1 medium)
  • smoked paprika (1 tbsp)
  • coriander (1/2 tsp)
  • sea salt (pinch)
  • pepper (pinch)
  • chopped tomatoes (1 x 400ml tin)
  • garlic (3 cloves, minced)
  • olive oil
  • cayenne (pinch)

Method

In to a deep pan, add some olive oil and fry off onion and yellow pepper until soft.
Add in the garlic and continue to fry over medium heat.
Add in the spices (paprika, coriander, cayenne) and sausage bites. Fry off for a minute or so, coating in the spices. Do not let it burn and reduce the heat if necessary.
Add the tin of tomato plus 100 ml water. Bring to a boil before reducing to a simmer. You will want to stir often to ensure it is not sticking.
Add more water if you find it sticking too much.
Continue to cook for at least 15 minutes until the sauce is thickened, the flavours are infused and the sausage is cooked through. Taste the sauce and add your seasoning (salt and pepper) to taste.
Serve piping hot straight from the pan.

Note

You can make this in advance and keep it in a sealed Tupperware in the fridge until required. Always serve piping hot. Can be frozen but once defrosted do not freeze again.
