A delicious & low carb spinach omelette.
- Coconut oil/ghee (1 tbsp)
- Spinach (Large handful)
- Fresh coriander (Small handful)
- Onion (1/4)
- Chestnut mushrooms (3 or 4, diced)
- Ham (1/4 cup)
- Herbs & spices of choice
- Cheese (handful, grated)
Heat the coconut oil or butter in a frying pan and toss in the diced spinach, mushroom, ham
Beat the eggs and add to the pan once the spinach has wilted. Heat gently and once it starts to
cook, add your optional cheese, herbs and spices.
Using a spatula, carefully fold your omelette in half. Use the outside of the pan to form a nice
half circle and continue to cook. If confident, try and flip it over so it cooks equally on both
sides. Cook until brown on both sides.
Serving suggestions: Serve with salmon and avocado.
